Kuih Chara

Made this delicious pancake-like kuih for bible study and it was a hit. The 'silver dollar' size of this kuih makes it very easy to dip into the coconut syrup and pop into the mouth. My kids call them 'green pancakes' and they consume 5 little kuihs at a time. This recipe was adapted from Agnes Chang cookbook. As I had used up all the frozen pandanus leaf in the house, I opt for using the pandanus essence to flavor and color this kuih, and it came out pretty nice. This recipe makes a good size batch, about 50 little round kuihs in the mold.

Kuih Chara

4 extra large eggs

8 oz sugar

7 oz coconut milk

1/4 c evaporated milk

2 c self-raising flour

2 tsp pandan essence (from asian market-kopi brand)


Coconut syrup

8 oz coconut milk (savoy brand)

2 Tbs flour (mixed with 2 Tbs water)

Pinch of salt



Add 2 tsp pandan essence to 200 ml water. Set aside

Whisk eggs and sugar until combined.

Add self-raising flour, coconut milk, pandan mixture and mix well. Put mixture through a sieve.

Set aside for 5 mins.

Heat and grease the mold pan over the gas burner stove. Stir batter, and fill 3/4 of the mold. Cover and cook for about 5 mins. or until it looks opague and skewer comes out clean. Use skewer to help take the kuih out of the hot mold.


Coconut Syrup

Simmer the sauce ingredients over low heat. Stir constantly, and remove from heat when mixture thickens.

Serve immediately.

Notes: The tricky part of this recipe is the heat. I had it on medium at first and the first batch came out perfect, but was too hot for the second batch and it browned quickly. Then I had it on low heat, and it took 8 mins for it to cook. Finally had it at the perfect temperature, and it cooked in 5 mins.

I used my ebleskiver's pan for this recipe and it came out great. It's like a pandan-flavored mini pancake and the only way to convince my girls to eat it is by calling them pancakes.:)
