I love warm summer-ish days in late spring, and it wouldn't be long before the dog days of summer gets here. About two weeks before the summer solstice(yippee!) and I am having a popsicle party for moi today. Uhh.... I meant for the kids, of course!
Made a batch of different berry-flavored popsicles. Many moms I know add powdered probiotics in it too, but since I didn't run to the store today, I omitted that, and added some applesauce into the blender with the frozen fruit and a some apple juice. Found these funky little popsicle molds that have a straw at the bottom to suck up the melting popsicle. (First 2 pictures) The kids like it although it didn't work as well as the idea of it.
Also made a batch of red bean and green bean popsicles since I had made some red bean and green bean 'tong' today. Very asian thing to do, going for the little red and green beans, I guess. And since the green beans are 'cooling' or yang and the red beans are 'warming' or yin, I reckon that I should consume one of each, don't you think. Oh, I meant the kids ate that - yah!
1) Made another batch of popsicle that was yummy with 1 (6 ounce) can frozen juice concentrate (100% juice) 2 cups plain yogurt 2 teaspoons vanilla.
2) Also tried this recipe too:
2 1/2 cups seedless watermelon, diced
1/2 cup fresh raspberries
7 tbs sugar
1 Tbs plus 2 teaspoons fresh lemon juice

As easy as this may look, making popsicles can be challenging. I remember many years ago, I bought the plastic mold. After failure, I donated the mold. The popsicle did not come out in one piece.

I'll let you in on unmolding. The secret is to run the mold under hot water for a few seconds first. Try it again cause I'm sure your kids will love it! :)
Thanks for the tip. Now, I just wish I hadn't given my mold away. Luckily, they are not too expensive, so I can buy them again....

Is the applesauce to make the popsicles gel together?
Yes, we all did, especially the big kid.:) The applesauce gives the popsicles more flavor and a little added sweetness.
These are cute and healthy! Great idea for kids!
