Luscious Lychees Lush

I have a passion for fruits, especially tropical ones that only appears in the grocery stores every once in a while over here. Fruits like rambutans with it's 'hairy' nature and juicy flesh covering a big seed, the tan, brown skinned longans hiding it's sweet fruit and mysterious small, shiny black seed, or the glamorous lychees with it's bumpy redish shell and succulent flesh (who cares about the seed at this point?) Such a potpourri of beautful fruits and always a joyful sight to my eyes (and tummy too!) So when I saw some lychees at Wholefoods, I had to grab some. And after having it fresh off the shell with the kids, I decided to use the rest in a gorgeous salsa with dinner. This is a fun treat till the next tropical fruit attack at the grocery store!You can tell that I added a last-minute ingredient to the salsa below, and you can probably guess all the ingredients that went into this salsa, can ya???

Lychee salsa! That's very different! I see you also added a bit of spice to the salsa ;-)As for the last minute ingrediant...hmmm...is that strawberry? Or maybe tomato?

Lychee salsa...interesting. I like lychee both in sweet tangy desserts and salsa like this. I also like them in savory dishes. You can try lychees in sweet sour pork/chicken. I've tried it before and so tasty.
Lychees are so versatile, aren't they?
