Cashew Chicken
My dear, sweet Hubs loves nuts. Ummm, I wonder what that says about me?!? Anyway, it seems that whenever I add nuts to my cooking, he would finish the dish commenting that it was delicious. So tonight I made a PG version of cashew chicken without the dried chilies and cayenne pepper that I would usually add to this dish, and the plates were cleaned by the kids too! Maybe I should keep more nuts around in the kitchen!
I had seen a similar recipe at Simply Recipes sometime ago, which inspired me to make this dish again. Of course, being that I can't leave a recipe alone, I made a few variations to that recipe using the ingredients I had on hand.
This is my version....
What I did was marinated the cubed chicken breasts in tamarind juice and spices and stir-fry it with kecap manis and it gave this dish a wonderful sweet with a hint of sour taste. It also gave this dish the color I wanted. Bought the blanched cashews from the asian market and toasted it in the toaster oven, then added it to the stir-fry right at the end.
