French Fries Please!

My kids demanded french fries with their milk shakes for snacks today. Actually, they mentioned that 'M' word because they wanted to go to that playarea of the 'golden arch' more so than the Happy Meal (I think), but I wasn't going anywhere on the icy, icky side roads after yesterday's snow that seemed to last all day. So I went into the pantry for some spuds and cooked them up some fries. After washing and slicing the russets, I parboiled them for about 3 minutes, dried them on paper towels, and deep fried in vegetable oil for about 5-6 mins. Add a pinch or two of salt and they were good to go. Although they were not as crispy as the fast food places, they were tasty, and definitely less salty. The kids enjoyed them too, so there were less for me. And that's a good situation.

Oh wow, that looks wonderful. And to parboil them first that's great idea. The oil though looks scary haha.

Gong Xi Fa Cai, V, have a great rat year.
