Braised Mushroom with Vegetables


Made another simple vegetable dish for the veggie queen tonight.
I used a combination of dried shitake mushrooms, mini portbellos and button mushrooms and braised it with rehydrated dried bay scallops for 20-30 mins in a mixture of dark soy sauce, minced garlic, oyster sauce, minced ginger, minced shallots and fresh ground black pepper before adding the mini green beans, shanghai bok choy and baby spinach. Drizzle with dark roasted sesame oil right before serving alongside steaming hot rice.
